Slow Cooker Jambalaya

The best presents are those that involve food, end of story. So we were psyched when a New Orleans native gave us her own recipe for their famous Jambalaya. Anyone who has ever had an authentic Jambalaya knows that it bursts with flavour and, our favourite, heat! This version is easy to do and you can make it as spicy as you like. Don’t be afraid to really dollop in that hot sauce!

INGREDIENTS:
– 500g of skinless chicken breast cut up into small pieces
– 500g of spicy sausage, sliced
– 1x 400g can of chopped tomatoes
– 1 large onion chopped
– 1 cup of chopped celery
– 1 cup of chicken stock
– 2tsp dried oregano
– 2tsp dried parsley
– 2tsp Cajun Seasoning
– 1-2tsp of Louisiana style hot sauce (we recommend Sidekick’s Aged Bonnet)
– ½ tsp dried thyme
– 2 cups of rice

METHOD:
1. Place all ingredients except the rice in the slow cooker. Cook on low for 7-8 hours, or on high for 3-4 hours
2. Cook the rice separately
3. When both are ready, mix the rice with the Jambalaya in the slow cooker
4. Serve with some more hot sauce and enjoy!
